Recipe:
-1.5 cups buckwheat groats (apparently you can use buckwheat flour, however I have not tried this or any other substitutions)
1/4 cup chia seeds
1 cup water
1/2 tsp salt
1.5 tsp baking powder

1) Soak buckwheat groats overnight in plenty of water, or at least for 2 hours
2) Rinse buckwheat thoroughly and place in food processor (blender would work fine as well)
3) place chia seeds in a bowl and add 1 cup water. Allow to sit for 10-20 min until a gooey texture is achieved.
4)Preheat oven to 330F
5) Add remaining ingredients to food processor and process until mostly smooth but still a little bit chunky.
6) Place mixture in a loaf pan lined with parchment paper.
7) Bake for about 1 hour and 20 minutes. Individual ovens vary, so it could be anywhere from 1 hour 15 min to 1 hour 30 min.
8) Wait 30 min or so before slicing (if you can 😛 )

Hi Christine!! I have made the bread but I am not sure about the right consistency, I left it in the oven for about 45 minutes and then used a knife to check the inside and it seemed done but I would appreciate if you could show a picture of the bread sliced without any toppings, thank you!

Hello there! New here! Could you please tell me are those raw buckwheat groats? I have never had buckwheat. I have seen brown buckwheat seeds in the European store I visit often but have never purchased or tried. Are there different types of groats? Thanks!

Hey Christine, I have a question. Why do you choose to not wait to get the buckwheat sprouted before mixing everything? Do you think the soaking do the job? Thank you.

I baked it without the powder, it's wonderful. I made mini pizza by slicing it in half and then doing it on a long ways, and then I put butter and maple syrup on the other side. I love chameleon foods you can dress up.

I always made mine this way and today i tried with buckwheat flour instead and it works ! Just 1 cup buckwheat flour some water and baking powder and you've got a gluten free and really easy to make bread 😊 i made 1 bread out of 1 cup of buckwheat flour and i can eat the whole loaf in one meal that way 😁😁

The thing I like about using the grouts rather than the four is that buckwheat really does need soaking and rinsing. It gives like a thick pink soap . You can't do that with buckwheat flour. Also if you soak the groats in warm water then it will speed up the process.

Is it work without standing 2 hours? I do farinata bread (also gluten free and vegan) with pouring almost boiling water on it, no stand and it's percfect. Can I try this method on buckwheat bread?

I dont have a food processor. Is this a must? It looks great and I am trying this. Very sensitive to gluten , never used to be until recently. Bananas and chocolate sound yummy too.
