Coconut Lime Loaf
195g almond meal
3 Tablespoons coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
Zest and juice of 2 limes
1/2 teaspoon vanilla powder
90g coconut milk
125g raw honey
45g melted coconut oil
Preheat oven to 175 degrees Celsius. Prepare and line a loaf tin with baking paper.
Add all dry ingredients and combine 4secs/speed4.
Add all wet ingredients combine 20secs/speed4. Scrape down sides and repeat if necessary. Do not over mix. Rest in tin for 5 mins before placing in preheated oven.
Bake approx. 25-30mins until golden brown and skewer comes out clean.
Cool in tin.
This can also be made in a food processor, cake mixer or in a large bowl.
Place all dry ingredients in a bowl and mix until combined. In a separate bowl mix together all wet ingredients until well combined. Add to dry ingredients and stir together until all dry ingredients are mixed in. Don’t over mix. Then pour into loaf tin and cook as above.
Note: If you are using coconut flour for the first time the ratio is usually 1:4 what you would usually use with wheat flour.
