Paleo allows butter since it contains no lactose and the protein that causes inflammation

I like to think of it as more of a flavour addition than anything else. Butter is delicious. And bacon fat? Ugh, to die for!

That's actually a myth. It has very LITTLE lactose because lactose is water soluble and the butter making process separates most of the water (whey) from the milk, but it's no 100% lactose free. That said, most people with lactose intolerance can consume small amount or use ghee/clarified butter.

Sometimes I cook with a tiny bit of Ghee (clarified butter-all the milk fats/solids are removed) but only very rarely.

This looks great. I'm dairy/lactose intolerant, but didn't know that real butter has no lactose in it! I feel really stupid, but happy, because I'd much rather eat real butter than margarine! So, thanks for that. 🙂

    Wait, isn't butter a carb?
