Yes my favorite time of the year is fall and not just because of the amazing chillier weather, the beanie, sweater and boot season, the amount of football games on or the trees changing colors but how about the fact that all things pumpkin are here and its the BEST time of the year to cook up all things PUMPKIN! I know its not October yet, but we can get a jump start with the pumpkin cooking in September because YOLO! hahah
I hope you all enjoy is amazing Protein Paleo Pumpkin Muffin recipe that I created for the perfect snack, an early morning breakfast treat or to pack in your kiddies lunch!
They are SUPER easy to make and all you’ll need is a large muffin tray and some simple ingredients you can get at any store 🙂
Recipe in writing below:
-1 cup of paleo flour mix
-2 cups old fashion oatmeal ( I get the GF kind)
-1/3-1/2 cup coconut flour
-1/4-1/3 cup of Vital Proteins Collagen Peptides
-1/2 tsp baking soda
1/2 cup crushed pecans or walnuts
ADD SPICES TO LIKING & TASTE:
-high quality salt, pumpkin pie spice, nutmeg, cinnamon (LOTS)
-1 cup of organic pumpkin
-3/4 cup honey or maple syrup
-2 whole eggs
Mix everything together and put into a large muffin tray. Bake at 350 to 400 and around 25 minutes depending on your ovens temp! Keep checking!
