OMG these are soooo good! I took a delicious paleo appetizer and made it AIP compliant by swapping out regular bacon for organic nitrate-free, pepper-free bacon; then I swapped out the almond butter for AIP approved tigernut butter.
18 organic medjool dates
9 slices of organic nitrate-free, pepper-free bacon
4 tablespoons of tigernut butter
1.) Slice your raw bacon in half and do the same for the dates.
2.) Now stuff each date one at a time with the tigernut butter (just enough to add texture and flavor).
3.) Now roll a 1/2 slice of bacon around each date and use a toothpick to keep the bacon in place.
4.) Bake for 18 mins at 425 degrees; or until the bacon is fully cooked.
5.) Enjoy!! These are best served warm out of the oven 🙂
