DIY Girl Scout Cookies: Thin Mints, Samoas, Do-Si-Dos (Keto, Paleo, Vegan, Gluten-Free)

It’s that time of year again- Girl Scout cookies are all around us and they are magical. But what if you follow a specific diet- or prefer a cleaner ingredient list, minus the gluten, soy, cane sugar, or processed seed oils found in many commercial baked goods?

Well, you’re in luck because whether you’re keto, paleo, vegan, or gluten-free, we’ve got just the hack for you, with our keto-friendly thin mints, paleo samoas, and vegan do-si-dos. We turned to Swerve erythritol and stevia-sweetened Lily’s chocolate chips for our low-carb keto thin mints, sweetened up our samoas with maple and dates, and looked to maple again to sweeten our do-si-dos. We used almond flour across the board for a protein-heavy, gluten-free, no-carb alternative to wheat flour. And we leveraged the power of almond butter as a vegan binder in lieu of egg for our do-si-dos.

The results were delicious and easy to make at home. To shop the recipe and get 20% off your first order, visit:

These look great! Thin Mints are my absolute favorite! And don’t get my hubby started on the Somoas! Is there a way to get a print out of these recipes? In particular I’m curious about how much liquid was added to the dates in the Samoas. Thank u❣️😋

How is there no egg in the thin mints?

I love the music in this video. So cool! Can't wait to try the thin mints. They were always my favorite when I was a Girl Scout eons ago LOL.

I’m not making the thin mints again any time soon. I ate too many. 😂
