Paleo Pork Dumplings (Gluten-free)

Adjusting to a paleo or gluten-free diet doesn’t have to mean saying so long to your favorite foods, especially if you live for Chinese take-out. While dumplings take a little more effort to make paleo-friendly, including making your own dough with tapioca starch and almond flour, the payoff is worth it in crispy and decadent dippable dumplings. We used Thrive Market’s regenerative farm-raised pastured ground pork in this recipe, but you can experiment with different proteins and fillings- just make sure they’re fully cooked before adding them to the dough wrappers. On the side, we whipped up a quick dipping sauce with coconut aminos, vinegar and hot sauce, but these dumplings are delicious on their own as well.

It's refrigerate the dough for an hour if anyone was wondering! Also added another egg and a touch more tapioca flour (about 3 tbsp) and it worked! Thanks
