SWEET POTATO GNOCCHI | gluten-free + paleo

107695

This sweet potato gnocchi is both gluten-free and paleo and topped with a delicious sage walnut pesto. It’s the perfect hearty and savory meal for fall and I think you’re really going to love it! I actually made extra of the sage walnut pesto, froze it in an ice cube tray (which I show in my Kitchen Gadget video)…and now have plenty for future use on the next gnocchi recipe or zucchini noodle recipe. Enjoy!

Another trick we use in Italy to create the indentation is using a cheese grater!

I made this last night. Was going to comment then but I was too tired. I had no sweet potato, so I used butternut squash. DO NOT USE BUTTERNUT SQUASH WITH IT LIKE I DID. I repeat: do not use butternut squash. It is not the same thing. I learned the hard way, 4 halves of squash, 4 cups of almond flour, 4 hours later…I'm just glad it tastes good :')

Interesting recipe, I'll definitely give it a try. Just a small suggestion from an Italian new subscriber: after cutting the dough rope into pieces, roll them as little balls between the palm of your hands and then roll them on the paddle OR (and that's what my family has always done) on the back of a cheese grater. I always roll them with a movement from the bottom to the top of the paddle/grater. It's easier and they turn out more regular.

The video does not say how much walnuts to use (1/2 cup? 1 cup?). Nor does it give instructions on how to bake the sweet potatoes, I don't have a microwave. Thanks.

I made it yesterday to go with our home made pasta sauce. I used rice flour instead of almond as I didn't have any. I'm not keen. Mind you I'm not keen on gnocchi anyway. Onwards to other recipe to try.
