Sweet Potato Noodles (Paleo, gluten-free side dish recipe)

Sweet Potato noodles are a staple of a gluten-free and Paleo diet and something that can either be used as a side dish or in place of pasta or rice noodles (think spaghetti and meatballs or Pad Thai). This short tutorial shows you how to make sweet potato spaghetti using a handy tool called the Spiral Vegetable Slicer (or Spiralizer). You can even eat these on Autoimmune Paleo or Whole30 variations of the Paleo diet.

    New way of cooking: I've actually been baking these in the oven at 425 F for about 15 min lately – just laid out flat on a baking sheet, and it works well too!

    This is why I wish I had a stand spiralizer! I only have a handheld one which sweet potatoes never fit into, but this is certainly making me want to invest!
