Recipe ;

Ingredients

1Cup Wholemeal Flour
1/2Cup Almond Meal
(If you cannot find almond meal change it to 1 1/2 Cup Wholewheat or Atta Flour)

2 Ripened Bananas(Large)
1/4 Cup Virgin Coconut Oil
1/2 Cup Coconut Sugar (powdered palm sugar/ jaggery can be used alternatively )
1/2 Cup chopped Walnut
3 Tbsp Sunflower Seeds
1/4 Cup Soy Milk

1 tsp Baking powder
1 tsp Cinnamon powder
1/4 tsp Salt

Method

1.Preheat Oven.Spray or line with muffin holders a muffin pan and set aside.

2. In a bowl mash two banana thoroughly to semisolid mixture .

3. Add Coconut oil,Soy Milk, salt, and coconut sugar and mix it well

4.Then add other dry ingredients to the mixture.(Almond meal, Wholemeal flour,Cinnamon powder,Baking powder) and mix it well with a wooden spoon or spatula

5.Finally add chopped walnuts and sunflower seeds to the mixture and fold in to the mixture.

6. Place batter in muffin tins about 3/4 full. Top with chopped Strawberries and bake for 20-25 minutes until golden brown and a folk inserted in the middle comes out clean

7. Remove from oven and let cool 10minutes
